Method of Preparation: |
|
|
|
|
|
1. Mix first 3 ingredients in heavy bottom pot. Turn heat onto low |
|
|
|
|
2. Slowly bring the mixture to a light boil. Season with salt and pepper |
|
|
|
3. Place spinach on the bottom of a separate container |
|
|
|
|
4. Add the soup and chill as fast as possible or serve |
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Variations: |

|
|
|
|
1. For Herb: Add 1 tbsp of fresh dill, basil, and oregano |
|
|
|
|
2. For Artichoke: Add 1cup drained artichokes |
|
|
