Yield: 2 qts
Ingredient Amount
Tomato Sauce 3 cups
Diced Tomato 2 cups
1/2 and 1/2 1 qt
Salt To Taste
Pepper To Taste
Spinach 1 cup, packed
Method of Preparation:
1. Mix first 3 ingredients in heavy bottom pot. Turn heat onto low
2. Slowly bring the mixture to a light boil. Season with salt and pepper
3. Place spinach on the bottom of a separate container
4. Add the soup and chill as fast as possible or serve
Variations:
1. For Herb: Add 1 tbsp of fresh dill, basil, and oregano
2. For Artichoke: Add 1cup drained artichokes
Any of these can be mixed and matched
